Green Beans, Potatoes, and Zucchini 1 lb Green beans
2 md Potatoes, peeled, diced
1/2 c Oil
1 Onion, sliced
2 cl Garlic, minced
2 md Zucchini, sliced 1/2" thick
1/2 c TOMATO SAUCE, opt
Salt and pepper
1/2 c Romano
Remove tips from beans,and cut beans in half. Cook potatoes in boiling water, 5-6 mins, drain. In lg skillet, heat oil. Saute onion and garlic until onion is transparent. Add zucchini, TOMATO SAUCE, ssalt, pepper, beans, and potatoes. Cook, covered, over low heat, 15 mins. Sprinkle with cheese.
