Tomato Sauce 4 Green onions, thinly slices
1 Clove garlic, minced
1 tb Oil
2 tb Tomato paste
1 c Tomato juice
1 c Meat or vegetable stock
1/2 ts Fennel seeds
1/2 ts Oregano
1/4 ts Salt
2 tb Cornstarch
4 tb Cold water
Saute green onions and garlic in oil for a minute or two. Add tomato paste and blend in. Stir in tomato juice and stock. Season with herbs and salt. Dissolve cornstarch in cold water and stir into boiling liquid, stirring constantly. Cook until thickened.
Yield: approximately 2-1/2 cups.
