Beans In A Flask

1 lb Shelled fresh beans*
1/2 c Olive oil
Several sprigs fresh thyme
Freshly ground black pepper
2 Cloves garlic
1 Lg. tomato,seeded,chopped

*Try limas,favas,haricots,crowders.

This famous Tuscan dish is a quaint way to cook fresh white shelled beans. To do it the traditional way, strip the straw covering from a Chianti bottle. Fill the bottle with beans, olive oil and herbs. Bake it for 3 hours in a bed of charcoal ashes. The flavor of the smoke and oil perfumes the delicate beans, which you can then use as part of an antipasto arrangement. If you don't have a convenient bottle, you may use a casserole dish. And if you don't have fresh beans, use dried ones that you have soaked.
